          Sample of Recipes from MACOE Cookbook


          The easiest recipes I've found

          MACOE is the employee organization for
          Federal County Office Farm Service Employees,
          where I used to work.

          Most of these recipes were contributed to MACOE
          by members or friends of MACOE.
          I've listed what I think are the best and easiest
          since easy is what I do best :-)

          Easiest Ever Peach Cobbler

          2 lb. peaches and juice (I use the big 28 oz. can
          and it works out well)
          1 stick butter
          1 box yellow cake mix (butter recipe)

          Pour peaches and juice into 13x9 inch pan. (Glass works best!)
          Sprinkle cake mix (dry) over top.
          Slice butter into 1/4-inch slices
          and place over cake mix. Bake at 350 degrees
          for 30 to 40 minutes or until browned.

          My husband took this to the fire station with him and
          every man on the shift left work the next afternoon
          headed to the grocery store to buy the fixins'!

          This is WONDERFUL but not for
          one of those days you're counting fat grams!

          Kelley's Squares

          1 stick butter or margarine, softened - 8 oz. cream cheese
          1 box yellow cake mix
          3 eggs - 1 c. chopped pecans - 1 box powdered sugar

          Mix butter, cake mix, 1 egg, and pecans by hand.
          Put in bottom of greased 13x9 inch glass pan.
          Mix cream cheese, 2 eggs, and powdered sugar with mixer.
          Pour on top of crust. Bake at 350 degrees for about
          35 minutes or until top is golden brown.
          Cool thoroughly and cut into squares.

          I have written out in the margin of this recipe "too good!" You can easily
          make yourself sick on this stuff!!

          Breakfast Brunch Casserole

          16 oz. shredded Cheddar cheese - 8 oz. shredded Swiss cheese
          2 lb. hot sausage - 6 eggs
          3 cans crescent rolls

          Brown sausage and drain. Mix together eggs and cheese.
          Add to sausage.
          Press 1-1/2 cans of rolls in bottom of
          9x13 inch ungreased glass baking dish.
          Pour in sausage mixture. Place remaining 1-1/2 cans of rolls
          on top. Bake at 350 degrees for 35 to 40 minutes.

          This is really good for brunch or even for supper. It is very filling
          and a little goes a long way!

          Cheese Ball

          2 (8 oz.) pkg cream cheese - 1 jar dried beef, shredded
          3 to 4 green onions, chopped up fine (include tops)
          1 tbsp. Accent seasoning

          Mix all together (save some dried beef to roll cheese ball in.)
          Chill for several hours and enjoy!

          This could not be any easier for a shower or party.
          Makes a good football game snack!


          These below came from my Mom; always the best kind :-)

          MOM'S SAUSAGE BALLS

          4 CUPS BISQUICK
          1-1/2 POUND SAUSAGE - EITHER HOT OR MILD
          3 CUPS SHREDDED CHEESE

          COOK SAUSAGE UNTIL ABOUT HALF OF IT HAS LOST THE RED, RAW LOOK.
          PUT BISQUICK IN BOWL, POUR IN CHEESE AND THEN PUT THE SAUSAGE
          IN WHILE STILL HOT. DRAIN THE BIGGEST OF THE GREASE OUT OF THE
          MEAT. STIR WITH A SPOON UNTIL THE MEAT IS COOL ENOUGH TO PUT
          YOUR HANDS IN AND THEN JUST SQUEEZE IT WITH YOUR HANDS UNTIL
          IT IS ALL MIXED GOOD. COOK AT ABOUT 350 UNTIL JUST A LITTLE
          BROWN ON THE TOP, DON'T TRY TO BROWN TOO MUCH THAT MAKES
          THEM DRY.

          MOM'S CHICKEN SALAD
          This is the BEST chicken salad I've ever tasted!

          2 - large cans of chicken breast - white meat
          Sweet pickle cut up fine
          Vinegar out of the pickle (just a small bit - experiment starting at 2 TBSP)
          salt/pepper to taste
          onion (if you like it) - doesn't keep in fridge as long with onion
          Mayonnaise - enough to make it spreadable
          1 TBs sour cream
          Boiled egg - chopped fine
          Pecans - chopped fine or ground - optional

          Just mix all together and put in refrigerator.

          Chicken Rotel

          4 chicken breasts, boiled or baked and torn into small strips
          1 can Rotel tomatoes
          2 lbs. Velveeta cheese or similar product
          16 oz. pkg thin spaghetti noodles
          1 can Le Seuer tiny English peas (use juice too)
          salt/pepper to taste

          Boil spaghetti noodles as normal. If you boiled the chicken,
          boil the noodles in the broth. While noodles are boiling,
          melt cheese and mix the rotel tomatoes, chicken, english peas
          and salt/pepper. Use the juice from the peas as well.
          Mix the cooked noodles in, put in 9x13 glass casserole dish
          and bake in oven for 20 minutes or so. It's wonderful!

          I hope you enjoy these recipes as much as my family has.
          I don't really like to cook but these are so easy that I don't mind
          fixin' this stuff! Enjoy!!!
